The “Bees Knees” is a prohibition era cocktail and is named after the phrase meaning “the best”. We have to agree that this particular version is extremely good, especially as we are starting to see some warmer weather.
Ingredients:
37.5ml Biggar Gin Plum Recipe
25ml lemon juice
25ml honey
Egg whites
Method:
Add the gin and honey to a shaker and stir until combined.
Add the lemon juice, egg white and ice and shake until chilled.
Remove the ice and shake again for 20-30 seconds
Double strain into a coupe glass
Garnish - we used a dehydrated plum slice in this example however a little lemon peel would work very well. We also drizzled a little bit of honey on top of the foam.
