How to make it
Fill the glass
Fill a highball glass with ice cubes.
Add the base
Pour in the Old Tom gin, lemon juice and sugar syrup.
Top and stir
Top with chilled soda water, give it one gentle stir and finish with a lemon slice.
Old Tom brings its own sweetness, so this uses less syrup than a dry-gin Collins. If you like it drier, drop the syrup to 10 ml.
