The Stillhouse — where every batch begins.
At the foot of the Tinto Hills in South Lanarkshire, near the Scottish market town of Biggar, you'll find The Stillhouse. This is where every bottle of Biggar Gin starts. It's a working distillery, small, deliberate, and built from the ground up by the people who still run it today.
A mill turned distillery

The Stillhouse opened in 2018 at Wyndales Mill in Biggar. Stuart and Euan McVicar designed, planned, and built it, which matters because it means every decision about how the space works was made by the people who dwell in it every day.
It's not a large building. That's intentional. The scale of the distillery directly shapes production, and small batches are the point. When you're distilling in limited quantities, you can pay attention to every run in a way that simply isn't possible at volume.
The Tinto Hills are visible from the entrance. That connection to place isn't incidental; it's the whole philosophy.

The heart of The Stillhouse is two copper pot stills. Copper is the traditional material for spirit production, and the reason is straightforward: it removes unwanted sulphur compounds during distillation, producing a cleaner, smoother, more balanced spirit than stainless steel alternatives can offer.
The design of a still matters as much as the material. The height of the neck, the angle of the lyne arm, the width of the condenser — each shapes the character of what comes through. Taller stills tend to produce lighter, more delicate spirits. Shorter, rounder stills retain more of the botanical oils, producing something with more body. Our stills are 100-litre Hoga copper pot stills, chosen for the character they give to our gin.
We run detailed notes on every distillation. Temperature, timing, and cut points are all logged, reviewed, and refined over time. Distilling is a conversation between the spirit and the still. Learning to read that conversation takes years, and we're still learning.
Water, botanicals, and where they come from

Every batch starts with water from the Biggar area. The mineral content and softness of local water have a direct effect on the final spirit; it's not a marketing detail, it's a production variable. We use what's closest and what works.
Our botanical selection is built around juniper, gin's defining ingredient, combined with a considered selection of [confirm core botanical list for Biggar Gin here]. Some are sourced locally from South Lanarkshire. Others come from further afield when quality demands it.
We're not precious about provenance for its own sake. We use what gives us the best result. But local botanicals have genuinely shaped the character of our core range, and that influence runs through everything we produce here.
Small batch, every time

We distil in small batches of around 140 bottles per run. That isn't a constraint we're trying to overcome; it's how we work by design.
Small batches let us taste every run before it ships. They mean we notice if something is off and can address it before it becomes a problem. They mean the person making the decision about cut points is the same person who designed the recipe.
The Stillhouse is also powered by renewable energy. We're not going to oversell this; it's a baseline expectation for how a modern producer should operate, not a differentiator. But it matters to us, and it shapes how we've set up the place.
We don't use artificial flavourings, shortcuts, or additives that don't belong in the bottle. What's on the label reflects what's in the still.

Gin
Biggar Gin, Biggar Strength, Old Tom, Herbaceous, Bonfire, and Cask Aged — each a distinct expression of how we work, made from the same still with different botanical and process decisions.
Rum
Our Asian Spiced Rum was our first move beyond gin. Made with the same attention to balance and finish.
Liqueurs
The Cold Brew Mocha Liqueur came from a straightforward question: could we make a coffee liqueur worth drinking? We think the answer is yes.
Ready-to-Drink Cocktails
Our Negroni Ready to Serve is made here using Biggar Strength Gin. The wider cocktail range is developed in collaboration with https://www.biggarcocktails.com and bottled to the same standards.

The Stillhouse is open to visitors

The best way to understand a distillery is to spend time in one.
We run guided tours of The Stillhouse on Tuesdays and Thursdays — two sessions a day, limited to six people, 90 minutes from start to finish. You'll see exactly how we work, taste the spirits properly, and leave with a clear understanding of what goes into the bottle.
Each tour includes a welcome serve on arrival and tastings of three core spirits plus one experimental recipe — whatever we're developing at the time.
